Red Potatoes with Walnuts and Gorgonzola

“Kissing God” is how our son describes these delicious roasted red potatoes which are stuffed with walnuts and gorgonzola. The full earthy flavor of the gorgonzola is enhanced by the thyme and Worcestershire sauce. The texture of the walnuts, bacon and the scallions balance the creamy texture of the potato mixture. These potatoes would be a great appetizer for any event.
For those with nut allergies, the walnuts can be removed from the dish and the taste will still delight.
